So, I finally decided to jump on the meal prep bandwagon because, well, my weekday dinners were turning into sad, last-minute microwave disasters. I spent a whole Sunday chopping veggies, cooking grains, and portioning out chicken (and tofu for my veggie days). It felt like a mini cooking marathon, but hey, at least I won’t be staring blankly into the fridge every night.
