The second one is better but the only thing I didnt like at all is sharp endings.
You could round your sig or put some cool frame. Would be better.

You can emboss the text there's nothing wrong with it, you just have to know how to use it properly. The options are there so you can use them though So, no. Use them, experimentation.

It just looks bad because he has a stroke around the render,and the text, which doesn't look good. Would be better with a dropshadow for the text I think.

They both have Text gradients... But the color of black being used in the gradient spectrum should be partly transparent or he should have used a lighter black (grey)
