If you had synced previous to doing the restore you can sync again to get those files back. Anything added after the last sync cannot be recovered unless you have a backup of those files.
I had accidently deleted my photos from iPad 2 last week, and I follow this article of how to recovery detleted photos on iPad to find all my favourite photos. Check out if it will help you too.
