As hard as breaking up with her will be, you need to do it sincerely. If you string her along for any longer, she'll only grow more fond of you therefore making it more difficult for you to break her the news. Just tell her that you're not looking for a relationship right now and you simply want to remain friends. If she's helped you as much as you say she has, she'll be compassionate and understanding.
