I think it would be more practical to do this via Google Office, I think they have a collaborative spreadsheet feature that you could use. The only problem is that someone could tamper with the stats of someone else...another way of approaching this would be to setup a private forum and have each person setup a thread there with their stats that they can edit then you could collect the data from there but you'd still have to manually collect the data..but at least you don't need to ask them as you'll have it right there on hand.
