I recommend just getting a totally unmanaged VPS from linode or something and just doing it all yourself, you learn a lot more...seriously.

And Google doesn't have an answer to every question you have. On top of that, if you get a managed server most hosts will also monitor it for you, however, if you get an unmanaged a lot of times you're going to be flapping in the wind, with really the only thing you can do to monitor it is but a monitoring service for http, ftp, etc. and use the top command.
