I'm just curious because I've gotten some pretty promising appraisals but I'm not sure how accurate those estimates are.

Estibot is actually a fairly good tool for appraisals but only when compared to other appraisal tools.
I wouldn't trust 100% the accuracy of any automatted appraisal system though.
You should always use common sense when considering the value of a domain. Estibot is good with grabbing some of the info you have to consider.
