I made 3 posts all over the forum within the last hour, but my post count still stays at 7.

Not for me, most likely a cache issue your side. Next time try hard-refreshing the page.

It's important to remember that some sections don't increase your post count.

Take this section for instance:
http://www.supportforums.net/forumdisplay.php?fid=76

Could be something on your end, or as Debra said, a section you don't know about's post count is disabled.
